Knight

At Dusk a lone knight rides slowly toward a quiet castle. His quest has been long and arduous yet, as always, he has galloped out triumphant and unscathed...his mind can’t help but wander to the familiar nectar he is about to savor. Our Knight consists of mostly Vignoles with a touch of Valvin Muscat.  Melon, peach, and floral notes surround the nose.  A lovely mandarin orange, peach and candied lemons in the front mouth quickly move to spiced peach, honey with tropical undertones!  Mouth-watering and a juicy finish!  Pair our Knight of the Castle with lamb couscous, grilled pineapple, Vidalia onion & chicken skewers, or pineapple-orange trifle.  Non-Vintage • 5% R.S.  • $17.95

2015 Jefferson Cup Invitational, Medal of Excellence - Equivalent to a Gold Medal

The great spirit Manitou rewarded the five original tribes of the Iroquois Nation by creating the five lakes. We have selected and blended five grapes to pay tribute to Manitou.Cabernet franc, Cabernet Sauvignon, Petite Verdot, Merlot and Malbec make up this spectacular Meritage. This wine starts with a nose of anisette and dried prune skins & hints of dark blue fruits with dusty overtones.  The mouth starts with wild black raspberries & blueberries turning to a strong black tea nuance.  Long smooth tannins with brandied cherries & cranberries finish off this classic Bordeaux style blend.  Pair this wine with kale salad, dried cranberries & peppered goat cheese drizzled with maple-blueberry balsamic dressing.  Beef Wellington.    Sage & smoked Gouda fondue with tenderloin tips.  Chocolate layered cake with cherries jubilee topped with fresh chocolate whipped cream.  Vintage 2013 • R.S. 0% • $44.95

Carrie

With magnificent style and grace, Carrie Collins created Belhurst in 1889. Her polished soirees and flare for the extraordinary earned her a reputation far exceeding many in the area.  Carrie’s Castle on the lake became known for it’s beauty, charm and romantic legends which exist to this day. 

Our signature blush made with Cayuga, Vidal Blanc and Baco Noir.  The aromatic nose is filled with ripe peach, cherry pie and a hint of cinnamon.  Mouth-watering candied fruit with more peach fill your taste buds.  With a soft, juicy strawberry-rhubarb   finish.  Pair this wine with Edam cheese with sour cherry chutney, Moroccan lamb Tagine, lemon cherry pie, or bittersweet chocolate torte. Non-Vintage • 2.8% R.S.  • $17.95

Red

Red

A hot spot in the Finger Lakes, Red’s 2nd floor casino at Belhurst thrived—and dabbled in political corruption—until 1951.  Pressured by the Kefauver Crime investigating Committee, Red stopped spinning the Roulette wheel , and  continued to entertain visitors with his magnetic personality and nationally acclaimed cuisine.  Today, Red Dwyer still presides over Edgar’s Lounge.

Red is a unique blend of Baco Noir and Malbec grapes. This lively wine with a velvety texture is the echo of a handshake from the Squire himself. This deep garnet wine starts with a wonderful nose filled with black currants, brandied cherries and buttered wheat toast!  Longer inhalations reveal licorice & a hint of cedar.  Brandied peaches start the front mouth with mouth-watering ripened prunes, dark chocolate.  Blueberries & a touch of cocoa on the finish…leaving you wanting more.  Pair Red with mussels in vodka sauce, barbecued pork sliders, pasta Bolognese or chocolate mocha cake topped with vanilla ice cream!  Non-Vintage • 1.5% R.S.  • $17.95

Neptune

Neptune

A unique blend of Melody, Cayuga & Traminette.  This delicate wine starts with aromas of banana, melon, and honeysuckle.  The light, smooth body carries grassy apple and peach forward.  Pervasive light mineral and spice surround these flavors.  Crisp spice lingers on the long finish.  Pair Neptune with grilled herb crusted squid steaks, Bibb lettuce, pear, and blue cheese salad, Mahi Mahi tacos topped with mango salsa or apple cinnamon dessert empanadas.  Non-Vintage •3% R.S.  •$17.95

Over a century ago, a pair of Golden Pheasants graced the lawns of Belhurst and were the prize possession of Carrie Collins. So beautiful were these Pheasants rumored, people would travel from miles away just to take a gander. Golden Pheasant, a luscious crisp semi-dry blend of Seyval and Chardonnay has a nose filled with candied pineapple, sweet flowers and a touch of wet stone.  A luscious mouth feel of peaches, and key lime.  The finish is long with hints of prickly pear, lime zest and more peach!  Pair this wine with Cobb Salad with avocado ranch dressing, tuna noodle casserole or pineapple upside-down cake! Non-Vintage • 1.2% R.S.  • $17.95

Our 2015 Chardonnay starts with banana custard, pineapples and vanilla with a hint of butterscotch in the nose. The nose is filled with warm cinnamon and tart plum, with overtones of brandy and smoked meat.  The mouth contains freshly cut wood, plum skins, and molasses.  The mouthfeel is held together by medium to firm tannins towards the front, finishing long with a hint of cassis.  Pair this wine with bacon wrapped chestnuts, wilted spinach salad with warm onion dressing.  Peppered London broil, or vanilla mousse drizzled with cranberry balsamic vinegar.  Vintage 2014 • R.S. 0% • $24.95

Black cherry and leather aromas start off the nose, followed by cassis and old wood, which opens to smokiness as the wine opens up. The mouth has lots of intense cassis and leather right up front with hints of violets.  These elements stay at the front of the mouth with nice tannins and a light body.  Pair with Carpaccio, charbroiled duck breast and plum sauce or Cornell barbecued chicken, and rum raisin pudding.  Vintage 2015 • R.S. 0% • $21.95
