PESTO
- 1 C. Chopped Basil
- 1 C. Chopped Parsley
- ¼ C. Cilantro Chopped
- ½ C. Chopped Chives
- ½ C. Pine Nuts
- 4 Garlic Cloves Chopped
- ½ C. Freshly Grated Parmesan
- 1 1/3 C. Olive Oil
- 2 tsp Fresh Lemon Juice
- 1 tsp Black Pepper
Pulse all ingredients together in a food processor until smooth. Enjoy tossed with your favorite pasta.
PORTOBELLO PIZZAS
- 6 Lrg. Portobello Caps (Gills Removed)
- ¼ C. Olive Oil
- Roasted Garlic Pepper
- 1 C. Pesto (see above recipe)
- ½ C. Crumbled Goat Cheese
- ¼ C. Parmigiano-Reggiano
- 1 C. Salsa
- 1 C. Monterey Jack Cheese
